250g (8.8 oz) sugar
10g (0.35 oz) corn starch
10g (0.35 oz) baking powder
30g (1 oz) melted butter
2 oranges (zest and juice)
1 small lemon (zest and juice)
Put the sugar, corn-starch and baking powder into the bowl of the mixer.
Start beating and add the eggs, melted butter and the orange and lemon juice and zest.
Line a rectangular tin with greaseproof paper, fill with the dough and bake in bain marie at 180ºC (350ºF).
Remove from the oven and turn out onto greaseproof paper and sprinkle with sugar.
Leave to cool slightly and then roll up.
Leave to cool and while still rolled up place in the refrigerator. Once well chilled, remove the paper and place on a serving dish and decorate to taste and serve.
